Brian's Disappearing Blackberry Peach Gluten-Free Crumble

Hey, this is Brian (aka Me Ra’s amazing husband :)) signing in today!

We got home from a great week of camping last night. I know Me Ra’s got a lot of great images and stories to share this week, but I’ve been really excited to share my own original “Disappearing Blackberry Peach Gluten-Free Crumble” recipe that I created last week. Being tired from returning late last night, Me Ra enthusiastically agreed to let me write today’s blog.

Last week Me Ra, the kids and I decided to try out a new bike route. Our neighbors told us about a fun route called the Interurban trail starting in Auburn. We ended up riding 26 miles, looking for the restroom that was supposedly three MORE miles away. Yes, I said 26. And that’s NOT Kilometers. I can’t believe Pascaline rode the 26 miles. When we got home later, Pascaline insisted she wasn’t tired. But for some reason she just leaned against the car for a L O N G time.

The highlight of the bike ride was the 2 mile long blackberry patch lining the trail. This is where we took a little break on the way back to the car. We left the patch with a ton of Blackberries and a little boy who looked like he’d been painting a house purple. 🙂

Me Ra had the great idea that we should make a Blackberry Cobbler when we got home. I jumped up and volunteered for the task. I LOVE Summer Blackberry desserts (or really any kind of dessert)!!! 🙂

The only problem is that I can’t eat anything with Gluten any more. We recently found out that Gluten keeps me up at night with a form of insomnia known as Restless Leg Syndrome. Ever since I stopped eating Gluten, I’ve been able to fall asleep. (For anyone who doesn’t know, Gluten is the protein in Wheat and Oats. So basically I can’t eat anything with Wheat or Oats in it. Talk about a pain, especially for a Swedish roots boy who has great respect for dessert!)

And then I saw my Gluten-free diet problem as a fun challenge. How could I go wrong with a bunch of sugar and butter? 🙂 So I searched the net for the yummiest Blackberry Crumble recipes. Then I searched for Gluten-Free Blackberry Crumble recipes for the best wheat substitute ideas. Finally I went to our local yuppie grocery store for more gluten-free flour substitutes. I added a little sweet tooth twist and this is my very on original “Disappearing Blackberry Peach Gluten-Free Crumble” recipe:

INGREDIENTS

  • 4 Cups Fresh Picked Blackberries (You should probably rinse these off first)
  • 1 Large Fresh Peach
  • 2 or 2 1/2 Cups Organic Sugar (This depends on your sweet tooth. I recommend 2 1/2 Cups.)
  • 1 3/4 Cups Gluten Free All Purpose Backing Flour (I used Bob’s Red Mill)
  • 3/4 Cup of Sweetened Coconut Flakes
  • 2 Sticks of Room Temp/Softened Butter
  • Few Teaspoons of Lemon Juice
  • Few Dashes of Cinnamon
  • For a little more gourmet flavor I might add little Vanilla, Cardamom, Nutmeg or other tasty spice next time
  1. Coat 3 Quart Baking Dish with Butter
  2. Put Blackberries and Peaches into the 3 Quart Backing Dish
  3. Splash a couple teaspoons of Lemon Juice over Berries and Peach (It think this is for more than flavor, does anyone know?)
  4. Sprinkle a portion of your Sugar (about 1/2 to 1 Cup) over Berries and Peaches
  5. Mix Butter, remaining Sugar, Flour, Coconut Flakes and Cinnamon in BIG bowl (I softened my butter in Microwave)
  6. Spread Crumble Mix over Berries
  7. Bake Blackberry Peach Crumble for 35-45 Minutes at 350°

Serve warm with Vanilla Ice Cream, and this is what you get!!!

That was YUM MAY!!! So my family told me. Give it a try. I think you’ll love it. I’m going to try and bake another one later this month and hopefully post a picture of it out of the oven before we gobble it up.

    Hey Brian! We have a few friends that are on gluten-free diets. Garlic Jim’s pizza has a gluten free option. Great Harvest Bread also has some options for a gluten-free diet.

    Also, here’s a link to two gluten free recipes that are both part of the 40-40-20 philosophy (calories are made up of 40% carb, 40% protein, and 20% fat). The chicken enchilada recipe might look scary, but I promise it’s not! 🙂

    i am very impressed at pascaline riding 26 miles. way to go!! gosh, i loved coming across random blackberry patches as a kid growing up in oregon. blackberries = summer. mmmmm!

    and very interesting about gluten and restless leg syndrome. i had no idea! i get bouts of it every couple of months, but not enough for me to have done anything about it….not yet anyway. i will pass this on to my mom who gets RL too…such a strange thing, and so hard to describe to people who haven’t felt it!

    Pascaline — you go girl! I have a seven year old son that complains about having to walk for a half an hour at the grocery store. You are one tough little cookie!

    Oh, and I am so glad you mentioned the rls and gluten. My husband suffers from sleeplessness due to rls and I am certainly going to try going gluten-free and see if that helps!

    dude! so…first off, i need to say that i am inspired at the gluten free desert recipe that you posted. Any protein that exist, conjoined with starch, in the endosperms of some grass-related grains, notably wheat, rye, and barley is no friend of mine….nor or yours i see…as is shouldn’t be. i can only hope that as you raise the consciousness of america…well…at least the consciousness of your blog readers with of the benefits of a gluten free diet that your efforts will truly be rewarded. perhaps in a follow up post you can discuss the controversy about including oats in a gluten-free diet. i for one will be waiting patiently….riveted!

    so…i leave you with a big fat ‘cheers’ to your impending mojito recipe…even though i’m not a fan of mint….but you know, i’ll try it….even though i don’t want to….just for you….give, give, give. 🙂

    16 comments? O M G!!! I think you are all my new 16 Best Friends! I am so excited you like the recipe. The coconut flakes are there for texture in place of the oats. Isn’t that ingenious? 🙂
    I’m glad to know that Me Ra has 16 blog readers who want to know my MEAN Mojito recipe. Even Jeramy who doesn’t like mint wants to know it. I wonder if there is a way to do the MEAN Mojito post so that only my new Best friends will be able to see it??? Huhmm???

    I have several friends/family members who have celiac disease (gluten intolerance) and would love this recipe! And I have some to share with you too—so yummy that you can still have all those delish Swedish desserts! 🙂

    Thanks for the recipe. My wife and oldest son have to eat gluten free products and always good to find new recipes. Though, we have never been fond of Red Mill All Purpose flour. We have come to love the Gluten Free Pantry. You can find it here http://www.glutino.com/content/view/86/116/. Most places sell the baking flour between $6 – $8. Whew! We have found a place in our local area called Drug Emporium. They carry it between $3.60 – $4.80. Much better. The reason I like there flour better than Red Mill is because the Gluten Free Pantry products don’t leave a bitter after taste in your mouth. But this is me.

    Yay for g-free! My whole family is gluten intolerant. I can’t do oats either, even pure ones. Your recipe looks delish. I’ll have to try it. I just wanted to say that there are some flour recipes in the book: Gluten Free Baking Classics by Annalise Roberts that are SO much better than Bob’s Redmill flour which in my opinion is nasty. I dont’ like the flavor of the BEANS in it. A simple all purpose flour just has 6 cups of brown rice flour and 2 c. potato starch and 1 c. tapioca flour. Also, that book has a great bread recipe, the best I have tried thus far. I’ll have to keep checking this blog for more g-free happiness. (my new motto is: gluten is evil.)

I’ve been trying out a lot of random mexican recipes, and the best I’ve found yet is this taco recipe – it totally remind me of my childhood. I dont remember much of it except for the spicy smells and tasty food on every street.
